Pandemic Week 11 (with Banana Bread Recipe!)

What a heavy week in the world this week. So much hurting hearts.  I hear you and I see you and I’m here to listen if you need to talk.  

In a surprising change for me, I’ve actually had a little bit more of a normal sleep schedule this week.  Falling asleep most days between 11pm-1am and waking between 6-9am.  I don’t think I even napped any of the days either. I think consistently taking my vitamins and getting fresh air and movement with my nightly walks are really helping. I actually mostly had a fairly good week mentally too other than one day mid week that I had a terrible anxiety afternoon that really drained me from all the crying. The low feeling and numb feelings really weren’t there this week – but I still didn’t have a ton of motivation to get stuff done. 

The Rogers saga continues.  The tech that was dispatched to pick up the equipment to be returned first didn’t show up the day I was told they were going to come and when I called I was told that it was for the next day.  Then the tech called when he was supposed to arrive saying that his supervisor wasn’t allowing him to come pick it up – even tho they were making an exception.  So I put in a ticket to talk to a manager and got a call 2 days later.  She set up the UPS label for return again – this time set up correctly (hopefully) to be delivered labels instead of printing labels (I don’t have a working printer with toner).  The label has yet to arrive… so the saga update will continue again next week.  I’m sure I’ll get another invoice in the meantime with late charges on them that I will have to again call to have waived. 

I’ve finished sewing my first 4 masks.  2 I mailed to my mom so she would have some.  The other 2 I gave to the extra house guest so she’s got them for her flights home.  Speaking of, her flight got cancelled again.  But a new flight was secured for the same weekend although it’s not as optimal as she wanted with 2 layovers – meaning more exposure in more airports.  Hopefully this flight sticks for her – as her flights home have now been cancelled 3 times. I’m working on some more this week for us to have for the household now. 

I got a few requests to share my banana bread recipe this week, so here it is! 

1 bowl banana bread recipe – this recipe totally fluctuates every time I make it… I really am not exact with the measurements but here’s what I loosely follow and it really does come out delicious every time. 

Mash 1-2 ripe bananas in your bowl.. whatever you have.. if you have 3 or 4 you can turn it into 2 loaves and double the rest of the stuff.
Add to the mashed bananas and mix together:
1/3ish cup butter/margarine/oil – you can also sub applesauce here
1 tsp baking soda
Pinch salt
1 or 2 eggs.. whatever you feel – I usually use 2 if small or medium and 1 if large
3/4-1 cup sugar but you could go down to 1/2 cup if you wanted
1 tsp vanilla or a splash
1 tsp-1 tbsp cinnamon or more – I love cinnamon, I just keep shaking the bottle
Mix all that together.
Add 1.5 c flour and mix that in.
Butter/spray your loaf pan.
Pour batter into loaf pan(s) – should be 1/2 to 3/4 full. Or you could do muffins!
Sprinkle granulated sugar over the top. About a handful?
Bake about 1 hour at 350. You know your oven best, it could be 50 or 70 minutes until your tester comes out clean.
